Two Bites Sized Chocolate Chip Cookies

Okay, they may not be bite sized but they are two bites sized. This recipe is great for kids but also for adults who want to indulge without feeling too guilty. I say that but I tricked myself into thinking that because they're so small, another one wouldn't hurt.

Two Bites Sized Chocolate Chip Cookies

30 - 40 cookies



Ingredients

  • 200g flour

  • 115g butter

  • 50g caster sugar

  • 100g light brown sugar

  • 1 tsp vanilla extract

  • 100g milk chocolate chips

  • 1 tsp cornflour

  • 1/2 tsp baking powder

  • sprinkle of salt

Method

1. Preheat the oven to 175°C.

2. Mix together cornflour, flour, baking powder and salt.

3. Melt the butter in the microwave for 30 - 60 seconds until the butter has partially melted. Remove the microwave and stir until all the butter has melted.

4. Add the butter, caster sugar and light brown sugar into a stand mixer (use a whisk and bowl if you don't have an electric whisk or stand mixer) and mix until it is all well combined.

5. Add the egg and vanilla extract and continue to mix until combined.

6. Slowly add in the dry ingredients until the dough comes together.

7. Add in the chocolate chips and stir.

8. Using a teaspoon, scoop out the dough and roll into a ball. Place the cookies onto baking paper.

9. Cook for 5-8 minutes (you want them to still be soft when you take them out of the oven because they'll continue to cook as they cool down).
