We're taking a trip to Lebanon with this fattoush recipe ! It's one of those salads you don't get bored of eating ! Also, it's a great way to make use of any stale pitta bread you may have laying around.

Fattoush Recipe
Serves 2-4
Ingredients
Juice of 1 lemon
2 tbsp sumac
2 tbsp pomegranate molasses
3 tbsp olive oil
salt to preference
half a cucumber
250g of lettuce
half a red onion
10 baby plum tomatoes
5 baby radishes
2 slices of pitta bread or the flatbread of choice
Method
Roughly chop the cucumber, lettuce and radish into bitesize pieces.
Slice the onion into thin slices and the tomatoes into quatres.
Add all the vegetables into a large bowl.
Heat a tbsp of olive oil in a saucepan on a low to medium hear.
Cut the pitta bread into small squares and add to the saucepan once the oil is hot.
Cook until the pitta bread is golden brown and crunchy.
In a separate bowl combine the juice of 1 lemon, sumac, pomegranate molasses, olive oil and salt.
Add the dressing to the vegetables and mix well.
Add the pitta croutons last so they don't go soggy.
Serve and enjoy !
