Think of a place where the sky and the sea are forever merged.  A place of bountiful land and limitless culture, that place is Egypt. When most people think of Egypt, they think of infinite sand and pyramids but as a country Egypt has so much more to offer than meets the eye. From the first leavened bread to farming techniques which are still used in agriculture today, the Pharaohs did more than pave the way, they created civilisation. In fact, Egyptians are known to have immense pride in their country, "masr om il donya" which translates to "Egypt is the Mother of the world".

The River Nile was considered a gift from the God's due to it's endless fertility. The abundance of farming provides a native shrub named jews mallow, a leafy dark green plant that is used to make a soup called molokhia. The influence that the Nile has had on food is vital and unmeasurable. Long story short, the river Nile was and still is the backbone of Egyptian culture. It would be ignorant to ignore the impact religion has on food. As a Coptic Orthodox Christian, there are many occasions which effect food. The obvious being Christmas and Easter. Christmas is known as "The Holy Nativity Fast" which is similar to a pescatarian diet but we refrain from eggs and dairy. In Easter we adopt a completely vegan diet for 55 days. During the year there are a number of different fasts commemorating different saints and occasions, it's through our food that we become one as a community. Egypt embodies of the new, the old and the Westernised.
