It's that time of year where Easter is approaching and for any participating in lent or in my religion (Coptic Orthodox) "seyam" finding vegan food that's fun can seem impossible! Don't fear a girls gotta is here, and this time I present you guys with loaded vegan "shawarma" nachos. Plant based alternatives are endless at the moment so dig through the aisles at the supermarket to get inspiration! I use the word "shawrama" very loosely because I'd be lying if I said I was the biggest fan. The texture wasn't the best and all you can taste is cumin. Don't miss out on adding acidity like lemon or Worcestershire sauce because it needs that tanginess !

LOADED VEGAN "SHAWARMA" NACHOS
Serves 3-4
Ingredients
175g plant based shawarma ( I used the vivera brand)
2 tbsp lemon/worcestershire sauce
1/2 white onion
1/4 pepper
1/4 white onion
1/4 cucumber
1/2 tomato
1/2 red chilli
80-100g shredded vegan cheese of choice
200g tortilla chips
100g ready made salsa dip
Vegan sriracha mayonnaise
Vegan garlic and herb mayonnaise
Hot sauce of choice
Method
Dice the all the vegetables and the red chilli - you want everything to be bite size!
On a medium heat add a 1/4 of chopped white onion and the shawarma. Add the lemon juice or worcestershire sauce half way through. Cook for 5-10 minutes until the shawarma starts to become crispy.
Add the tortilla chips on to a tray and top with the cooked shawarma. Sprinkle over the vegan cheese and place in the oven at 120°C for 10 minutes or until the cheese is melted.
Once you've taken the nachos out of the oven, dollop the salsa dip on top of the nachos in different places (try to make it even)!
Sprinkle over the remaining diced vegetables and red chilli.
Top with vegan sriracha mayo, vegan garlic and herb mayo & hot sauce.
Serve and enjoy !
