I'd call myself the self acclaimed pickle connoisseur. Pickles are one of those things were you either love or hate … and of course I love them ! I've found this is the quickest way to make pickles without using a hot brine. Being the pickle fanatic I am, I was messing around in the kitchen one time and I managed to ace a recipe the first time round which is definitely not a common thing for me ! The crunch, the tang - I'm here for it all.

PUNCHIN' PCIKLES
Serves 3-4
Ingredients
1/2 cucumber
1/2 white onion
1 red chilli
2 garlic cloves
240 ml water
80ml rice vinegar
80ml cider vinegar
1 tsp whole black peppercorns
1 tbsp sugar
1 tbsp salt
Method
Thinly slice the onion and red chilli. Slice the cucumber into the thickness of your preference. Peel the garlic cloves but keep them whole.
In a medium air tight container add the water, cider vinegar, rice vinegar, black peppercorns, sugar and salt.
Add the sliced cucumber, white onion, chilli and garlic cloves.
Close the container and give it a good shake for a minute or two until everything is mixed well.
Refrigerate for a week (minimum) before tucking in !
