Now that it's Summer, there's no time for boring salads. Watermelon and feta may sound like a weird combination but it's actually a match made in heaven - the saltiness of the feta cheese cuts through the sweet watermelon. Crisp, crunchy and charismatic. This salad is great for gatherings or as a starter, it will definitely leave your guests wanting more.
Watermelon, Cucumber and Feta Salad
Serves 3 -4
Ingredients
Small handful of mint
450g watermelon
180g cucumber (2 baby cucumbers)
150g feta cheese
2 tbsp pomegranate molasses
2 tbsp olive oil
1 tbsp balsamic vinegar (optional)
Method
Cut the watermelon into small chunks (roughly 1-2 cm thickness).
Chop the cucumber into small pieces.
Cut the feta cheese into 1/2 an inch cubes.
Slice the mint into thin strands (chiffonade cut).
Add the watermelon, cucumber and feta cheese into a bowl.
To make the dressing add olive oil, pomegranate molasses and balsamic vinegar.
Mix all the ingredients together.
Top with mint and serve.
Tips
* To make the salad extra refreshing make sure it is served chilled.
* Add the dressing when it's time to serve so that the salad doesn't become too watery.
