Save Your Money Sushi

Sushi is one of those dishes where you pay for quality, Tesco sushi may do the job but the high end stuff is unbeatable. I'm a person who wants sushi 24/7 but my wallet will often tell me otherwise. This is save your money sushi, a recipe to help satisfy your craving without breaking the bank. Whilst authenticity is important in appreciating and recognising a culture; I don't think it's such a bad thing that the Western world has adapted sushi into something more accessible for everyone's taste buds. It may be frowned upon in Japan but cooked sushi gives people who dislike or can't eat raw fish an option. Making sushi is a lot of fun and it's something that everyone can get involved in. It's impressive and great for gatherings.


*Don't be afraid to try something new, this recipe is definitely beginner friendly.*

*Use whichever fillings you want!*

*If you are using raw salmon, make sure it's sushi grade and safe to eat.*

Save Your Money Sushi

Makes 4- 6 sushi rolls

(6-8 pieces in each roll)


Ingredients

  • 2 cups of sushi rice (400g)

  • 2 cups of water (470 ml)

  • 4 - 6 sheets of seaweed

  • 3 tbsp rice vinegar

  • 2 tbsp caster sugar

Prawn Tempura roll

  • 8 - 12 frozen prawn tempura

  • 1/2 of a cucumber

  • 1 avocado

  • sriracha mayo

Duck and Hoisin roll

*I cheat and use the crispy aromatic duck from the supermarkets - it's just easier. I can wack it in the oven whilst I make everything else*

  • 3 spring onions

  • 1/2 of a cucumber

  • hoisin sauce

  • 1/2 crispy aromatic duck

Method

  1. Place the rice into a saucepan. Wash with cold water and drain. Repeat this process 3 times, you want the water to run clear.

  2. Add the water (from kettle) to the saucepan and place on a medium heat. When bubbles begin to appear around the edges lower the heat.

  3. Place a tea cloth over the saucepan and cover with a lid. (Make sure the tea cloth isn't too long so it doesn't set alight!)

  4. Keep on a low heat for 10 minutes exactly. Don't be tempted to check on the rice before 10 minutes, it interrupts the cooking process !

  5. After 10 minutes, remove the rice from the heat.

  6. In a separate bowl mix together the vinegar and sugar. Place this mixture over the rice and fold into the rice. Be careful not to stir or mix too much because this will break up the rice grains.

PRAWN TEMPURA

  1. Place a seaweed sheet on the sushi mat (make sure the bamboo sticks are horizontally facing you).

  2. Evenly spread a thin layer of rice, ensuring to leave about an inch of seaweed at the end of the sheet without any rice.

  3. Place the ingredients on the rice - a few cm from the start, towards the centre.

  4. Cook the prawn tempura in the air fryer or oven at 180°C for 5 - 8 minutes.

  5. Place two prawn tempuras (without the tail) on the rice, one after the other.

  6. Thinly slice the avocado and cucumber.

  7. Add a few cucumber and avocado slices beside the prawn tempura.

  8. Drizzle with Sriracha mayo.

  9. Gently lift up the map and begin to roll.

  10. Slice the sushi into 6-8 pieces - using a wet knife may help.

  11. Present with pickled ginger and soy sauce - enjoy!

DUCK AND HOISIN

  1. Place a seaweed sheet on the sushi mat (make sure the bamboo sticks are horizontally facing you).

  2. Evenly spread a thin layer of rice, ensuring to leave about an inch of seaweed at the end of the sheet without any rice.

  3. Place the ingredients on the rice - a few cm from the start, towards the centre. cook the duck according to the instructions on the packet.

  4. Cook the duck according to package.

  5. Pull apart the duck into medium sized pieces.

  6. Thinly slice the cucumber and cut the spring onion into thin horizontal strips.

  7. Drizzle with hoisin sauce.

  8. Place the ingredients on the rice - a few cm from the start, towards the centre.

  9. Gently lift up the map and begin to roll.

  10. Slice the sushi into 6-8 pieces - using a wet knife may help.

  11. Present with pickled ginger and soy sauce - enjoy!


TIPS

* Don't worry too much about how perfect the roll is, the more you make sushi, the better you get at it.

*You can buy a sushi set from Amazon or your local Asian/Oriental store.
