This was a shop I would always walk past on West Street in Brighton. It's a tiny hole in the wall that at first seemed doubtful, until one rainy day my uncle took us there. Needless to say I've been going back ever since. The restaurant looked like the ones I'd see on TV, the ones people would discover in hidden alleys in foreign countries.
At first glance, the menu seems daunting but really just offers variety. What makes this place unique is that you get to choose the type of noodles you want, with the broth of your choice and your favourite protein. My order without fail is a bowl of vegetable Singapore laksa with Japanese ramen. Now don't get me wrong I normally love meat, but the tofu is submerged in flavour and the crunch of the bok choy is essential. I love the freedom you have when choosing what you want in this restaurant, it's like a Subway but with noodle soup. And like any good restaurant, the extras are on the table from pickled chilli to Chinese black vinegar; adding to the overall eating experience.
If I'm entirely honest I don't have the knowledge I need to question the authenticity, but is it a good bowl of soup, yes it's fantastic. So on those cold December nights with friends, why catch up over coffee when you can catch up over a bowl of piping hot noodle soup.
