This was the kind of restaurant you've probably walked past hundreds of times but never gave it a second look. Bincho Yakitori has rightfully made it's mark in Brighton. From the moment you step inside, you're whisked half way across the world to a cosy little joint in the alleyways of Japan. It embraces the yakitori cooking method - Japanese grilling. They provide a menu but their specials are always one to look out for.

Karage Chicken (Japanese fried chicken)
Garlic Rice
Cauliflower (Korean style)
Gochujang Pork Ribs (Special)
Sweetcorn
Salmon
The show stopper in this whole meal was the gochujang pork ribs: fall off the bone, melt in your mouth, forget lick your fingers, lick the plate good. The glaze danced with a sweet, sticky, spicy flavour unlike anything I've tasted before. The salmon was also unexpectedly good, crispy skin and a flaky buttery texture to match. Cauliflower is one of those vegetables I despise, I never go next to it. Of course, this was the one off occasion where I thought I would give it a go because it was highly praised at Bincho. Unsurprisingly, after one bite this cauliflower had you coming back for more. Cauliflower crack is what I like to call it. The sauce is subtle but it serves its purpose.
This restaurant knows how good it is, from the awards they've won to the month long reservations but the difference is, they aren't pretentious. The fame hasn't gotten to their heads, it's still the same humble concept that attracted people to it in the first place. To an uncultured person the decor could be seen as unprofessional and cramped but that isn't the case. In fact, I appreciated the stacked cases of beer next to our table and the freestyle drawings and paintings on the walls. It emphasises that great food doesn't have to be complicated or expensive. It can be made for the masses without compromising the culture. Bincho Yakitori stood for everything I believe in as foodie, I can't wait to share it with friends and family. It's definitely won a place on my go to list and fittingly so.
