Homemade quick "Pizza"

Yes, even for somebody who loves to cook I have days where I don’t even want to step into the kitchen. And on those days I take myself back to year 7 food tech where we would make "pizza". In this recipe I prefer to use tortilla wraps because it resembles a pizza base the most. However, you can use whichever bread you like with whatever toppings you like. Simple yet satisfying.

* I love adding some hot sauce after it comes out of the oven.*





 

Homemade quick "Pizza"

Serves 1

Ingredients

  • 2 mini tortillas

  • 3 tbsp of tomato paste

  • 6 baby tomatoes

  • 56g of cooked chicken (I use chicken slices)

  • 45g of grated mozzarella

  • a few dashes of your favourite hot sauce

  • *any extra ingredients you want to add*

Method

  1. Place the tortilla wraps on an oven tray on top of parchment paper.

  2. Spread the tomato paste evenly on the tortilla wraps.

  3. Slice the baby tomatoes in half.

  4. Cut the chicken into bite size pieces.

  5. Arrange the tomatoes and chicken onto the tortilla wraps.

  6. Sprinkle the cheese on top of both tortilla wraps.

  7. Bake in the oven for 5 - 10 minutes at 180°C electric or 160°C fan, until the cheese is melted.

  8. Once it's out of the oven add a few dashes of the hot sauce.

TIPS

*If you're not a fan of tomato paste, you can use BBQ sauce as a replacement !
