Classic School Cake

Nothing says nostalgia like school cake. Queuing up for lunch, holding the yellow trays and the only thing you were concerned about was a big piece of cake smothered in custard. My favourite thing about this recipe is that it's fuss free and can be made in minutes in a stand mixer.

Classic School Cake

Serves 10-12


Ingredients

Cake batter

  • 180g butter

  • 3tbsp veg/sunflower oil

  • 4 eggs

  • 225g caster sugar

  • 225g plain flour

  • 2 tsp baking powder

  • 3 tbsp milk

  • 1 tsp vanilla

  • Sprinkle of salt

Icing

  • 200g icing sugar

  • 45ml milk

  • Sprinkles for decoration

  • Custard (optional)

Method

Cake

  1. Add the butter, oil, eggs, caster sugar, flour, baking powder, milk, vanilla and salt into a stand mixer (if you don't have a stand mixer you can use an electric whisk or hand whisk).

  2. Mix for 10 minutes, until the batter is fully incorporated and light.

  3. Pour the cake batter into a 9 inch cake tin and bake for 40-50 minutes at 180°C/160°C fan/ Gas mark 4.

  4. Once the cake is golden brown and cooked remove from the oven and allow to cool completely.

Icing

  1. Combine the milk and icing sugar in a bowl.

  2. Mix together until the icing sugar is fully incorporated and smooth.

  3. Pour the icing over the cooled down cake.

  4. Decorate with sprinkles.

Serve with custard and enjoy !
