Nothing says nostalgia like school cake. Queuing up for lunch, holding the yellow trays and the only thing you were concerned about was a big piece of cake smothered in custard. My favourite thing about this recipe is that it's fuss free and can be made in minutes in a stand mixer.

Classic School Cake
Serves 10-12
Ingredients
Cake batter
180g butter
3tbsp veg/sunflower oil
4 eggs
225g caster sugar
225g plain flour
2 tsp baking powder
3 tbsp milk
1 tsp vanilla
Sprinkle of salt
Icing
200g icing sugar
45ml milk
Sprinkles for decoration
Custard (optional)
Method
Cake
Add the butter, oil, eggs, caster sugar, flour, baking powder, milk, vanilla and salt into a stand mixer (if you don't have a stand mixer you can use an electric whisk or hand whisk).
Mix for 10 minutes, until the batter is fully incorporated and light.
Pour the cake batter into a 9 inch cake tin and bake for 40-50 minutes at 180°C/160°C fan/ Gas mark 4.
Once the cake is golden brown and cooked remove from the oven and allow to cool completely.
Icing
Combine the milk and icing sugar in a bowl.
Mix together until the icing sugar is fully incorporated and smooth.
Pour the icing over the cooled down cake.
Decorate with sprinkles.
Serve with custard and enjoy !
